Lean ham pieces are cured with a solution of sugar and other flavorings before being oven cooked under vacuum to create a uniformly molded slicing log with a 4 ½” diameter. The flavorful slices are suited to thinly sliced and shaved sandwich making processes given the superior slice yield of this log.

 
 

Savory pork, seasoned for the traditional mixto sandwich or sandwich Cubano, is tightly bound into a 4 ½” diameter slicing log and oven cooked under vacuum for optimum tenderness. The delicious slices of Cuban Pork are ideally suited to thinly sliced and thick sliced sandwich making operations.

 
 

Pork and beef are ground and mixed with chicken and bologna seasonings with an emphasis on mustard. All ingredients are emulsified to create a smooth surface with a consistent pink color. The uniform slicing logs of 4 ½” diameters are cooked under vacuum. Deli Star’s Bologna Log is formulated with minimal added water making it ideally suited for salad-making and sandwich-making applications or for other food processing procedures that require accurate finished product consistency.
